Prince Market sells about five gallons of milk every day.
Running a small market is a lean enterprise -- sales total about $34,000 a month but the profit margin is just 4 percent, decent for a grocery store but half the average of businesses in America.
"We're struggling," says Binny.
Under the healthy market program, the store will change its product mix to include more healthy foods and drinks and offer fewer high-sugar drinks and foods. The hope is that changed project mix not only will boost sales but also induce people in the area to adopt better nutrition habits. Prince Market is located in an area federally identified for a high incidence of childhood obesity and early onset diabetes.
At stake in the transition is survival of the store.
